Alma Prague offers a café, a wine bar, a cultural space and a restaurant with a bar and an open kitchen. It prepares dishes interwoven with the stories of the ingredients and the people who grew them, or the stories of their own fermentation, pickling and residue-free processing. The setting is modern, the atmosphere is natural and unstaged. The wine list offers wines from all over the world, especially natural ones. The menu under the direction of the chef duo Petr Židek and Michal Daněk shows a new perspective on traditional Czech recipes and practices. We recommend the grilled rabbit liver and kidney, which impress with their surprising blending of flavors and combination with smoked bacon, charcoal-roasted sour kohlrabi and salsa verde mayonnaise. We further recommend the perfectly balanced dill sauce with poached salmonid trout with an additional texture of crispy potato straw, reflecting the chefs‘ distinctive perspective. For dessert, try the grilled apricots with fig leaf ice cream. An even better tweaking of the textures of some dishes would confirm that Alma can work with Czech gastronomy in a great way, viewing it from a contemporary perspective.
