The fabrika RESTAURANT in Humpolec, which is part of the hotel of the same name, welcomes you with bright and airy space with enough place and privacy. The curtains, floral decorations, bold lighting and modern art create a welcoming atmosphere. In summer, you can enjoy a meal in the hotel‘s garden. The service is provided by mostly experienced staff that is helpful to guests. Chef Tomáš Petrák emphasizes fresh ingredients, which is reflected in the thoughtful, frugal menu. We recommend the jamón serrano with yellow melon, the tomato soup with homemade ravioli stuffed with mozzarella and basil pesto, or the poached zander with egg barley, pea puree and a bold wine sauce. The dessert menu includes classics, such as tiramisu and a delicate white chocolate mousse with strawberry jam served as a Popsicle. You can also enjoy homemade lemonade and fresh juices. The wine list is extensive, but does not offer the authentic wines you would expect here. Although the textures of some of the dishes could use some tweaking, The fabrika is an ideal spot on the Prague–Brno route or when traveling in Vysočina.
