Levitate Restaurant is located on the ground floor of Hotel President on the Vltava riverbank. The elegant design interior combines gold, wood, dark shades and a beautiful view of the river. The cuisine combines a modest Nordic approach with an Asian variety of colors, aromas and flavors. This is also an inspiration for the entire menu made under the baton of Chef Christian Chu, who emphasizes enjoying the food with all senses and the quality of ingredients. He thinks through every detail of his twelve- and eighteen-course menus inspired by the seasons. However, the menu is not known in advance and is presented in person by the restaurant‘s top staff, who speak only English. An amuse bouche in the form of a meringue with rabbit meat and conifer shoots or a dessert of foie gras with white chocolate, egg yolk and fermented honey make you assume that big things are happening here. The sturgeon with leek, caviar and sea buckthorn stood out for its well thought out harmony of flavors, and the conifer shoots with elderflower, basil oil and tomato jelly for their creative combination of flavors, techniques and textures. Everything is perfectly paired with a variety of carefully selected drinks. Levitate is undoubtedly one of the most interesting establishments on the Czech fine dining scene, offering great and sometimes even fantastic courses. Even so, a subtle tinge can linger on the tongue from an insufficient focus on the customers, who may lack the reassurance that this place is really cooking for them.
